Black Tea Dried Fruit Compote
*Makes: 4 to 6 servings
1 cup moist figs
1 cup moist prunes
1 cup no-soak apricots
½ cup fresh cranberries
2/3 cup port
2/3 cup China Black Tea, brewed
2/3 cup of water
1 Lemon, juice and rind
~In a sauce pan bring all above ingredients, except lemon juice, slowly to a boil, cover and simmer 20 minutes. Cool.
Add lemon juice to taste, transfer to a bowl and refrigerate for 2 hours.
1 cup Ricotta cheese
2 tsp. Honey
~Beat together in a bowl, adding 2 Tsp. of compote juice.
~Arrange compote in serving dishes, top with cheese mixture and sprinkle with slivered almonds. Enjoy!
