Sereni-tea mt shasta risotto

A simple and light deliscous dish to add to your entree. Enjoy!

6 Tbsp. lemongrass – steep in 3 cups of boiling water for 7 min.

2 Tbsp. olive oil – heat in large pan

2 shallots – chopped finely, sauté in olive oil for 2 min.

1 cup arborio (risotto) rice – add to pan, sauté for 2 more minutes

1 Tbsp. sea salt – add to the pan

Over medium heat, add 1 cup tea. Simmer and stir often until all liquid is absorbed before adding the next cup of tea. After all liquid is absorbed, remove from heat and add:

Zest and juice of 1 lemon

Salt and pepper to taste

Serves about 4.  Enjoy!
